Single Vineyard Chardonnay

Deep Woods Estate Single Vineyard Chardonnay is each year sourced from select sites across Margaret River. The selected sites must each possess an 'x-factor' that differentiates them.

The handpicked grapes are left overnight in a cool room set to zero degrees, then next day whole bunch pressed. The juice racked to one third new French oak puncheons and hogsheads for wild fermentation.

The wine does not undergo any malolactic fermentation. Bâtonnage (stirring the lees back into the wine) is applied sparingly. Only small quantities are ever made.

Pale straw, Deep Woods Estate Single Vineyard Chardonnay is powerful and poised with vibrant citrus acidity, savoury oak and persistent length. Cellaring potential is six years.
